Description
This is the second vintage of this wine. It is only made when the component parts are absolutely perfect. We use our very best block of Sauvignon Blanc and selectively hand-picked bunches of Semillon; both grape varieties ripened to perfection in the near perfect 2013 growing season. Most of the Sauvignon Blanc component was fermented and handled in stainless steel throughout the winemaking process. A small portion of the Sauvignon and all of the Semillon was fermented and matured in specially selected new French oak for eight months, with regular lees stirring to give added complexity. The final composition was 70% Sauvignon Blanc and 30% Semillon. It is an intriguing blend of younger Sauvignon vines with 20yo Semillon vines. The wine was bottled in late March 2014.
Pale straw in colour, on the nose it exhibits lovely citrus characters, especially lemon, and traces of vanilla, almond and nougat. It is a full bodied wine, mouth filling, almost creamy, and well balanced, with lovely citrus and herbal notes that linger impressively. Hints of oregano and thyme make it particularly appealing. It is complex and elegant with an intense, long, lingering, perfectly pitched finish.
This is still a very young wine, It will gain considerable complexity as it ages. There are still many nuances to unfold over time as this exciting wine develops.
