A few select rows in a Riesling block with a proven record for producing award winning botrytised wines were kept intact long after the harvest had been completed in the rest of the vineyard. The grapes were eventually selectively hand-picked at 42 brix. The carefully selected fruit was moved to the winery, where it was destemmed and cold soaked for 24 hours. It was then given a slow, gentle pressing to extract the rich, pure juice. After being cold settled it was fermented in stainless steel very slowly at cool temperatures to retain fruit intensity. Fermentation was eventually stopped when the ideal balance was reached between sweetness and alcohol.
It is a deep, rich, bright gold in colour and has spell-binding aromatics. The luscious, rich, enticing nose displays dried fruits, apricots and peaches, on a backdrop of honey and a little spice. It has almost a marmalade consistency, with some very ripe citrus characters. The prevailing impression is of rich, almost candied, dried fruits.
On the palate it is succulent and mouth coating with an extraordinary sweetness and richness. Very ripe stone fruit characters dominate, especially apricots and peaches, with hints of passionfruit and citrus. Honey is readily apparent and also a lovely almost almondy character that adds a real texture to the palate. It has bright, beautifully appealing, well balanced acidity, a lusciously creamy sweetness and an incredibly lingering, crisp, clean finish. Already drinking beautifully, this wine promises to develop even more complexity and charm given careful cellaring.
