This is the very first Riverby Estate Noble Sauvignon Blanc/Semillon. It comprises 55% Sauvignon Blanc and 45% Semillon. A selected block of Sauvignon Blanc was left for almost eight weeks after our initial sauvignon harvest. It became heavily botrytised and we were lucky enough to get a pocket of perfect weather so it could be very carefully hand harvested. The yield was tiny. Similarly, after hand harvesting some perfectly clean Semillon for our dry wine we left the remainder of that block until it too became heavily botrytised.
The carefully selected fruit was moved to the winery, where it was destemmed and cold soaked for 24 hours. It was then given a slow, gentle pressing to extract the tiny amount of rich, pure juice. After being cold settled both varieties were fermented separately in stainless steel very slowly at cool temperatures to retain fruit intensity. Fermentation was eventually stopped when the wine was perfectly balanced.

This stunning and quite rare wine is a bright pale gold in colour. It has the most enticing aromatics featuring an array of intensely ripe stonefruit characters, especially peach and apricot, but also a wide range of other complex flavours, notably marzipan and ripe, roasted, nutty characters. Vanillin, honeyed aromas add further complexity and allure.
It is luscious and mouth coating with an extraordinary richness and a beguiling sensual quality. Flavours of peach, passionfruit and citrus floating in a sea of honey all contribute to its complexity and depth. It has bright, beautifully appealing, well balanced acidity, a lusciously creamy sweetness and an almost endless, lingering, crisp, clean finish. This is a wine with immense appeal and charm. It promises to become even more attractive with careful cellaring as it develops increasingly complex characters.
